Egg-Free Shortbread Cookies


Kids will have fun baking with this egg-free dough!


Perfect Egg-free recipe for an OCD mommy!

Yay can you say Salmonella -free dough! Dough you can let your kids play with without worrying that they are touching and spreading raw egg bacteria!
They will have a ball rolling this yummy sweet easy-peesie dough and cutting out different & fun shapes!

Ingredients you'll need:

3 1/2 cups all-purpose flour
1 cup sugar
1/4 teaspoon salt
3/4 pound softened room temperature unsalted butter
1 teaspoon of pure vanilla extract
Directions:
Preheat the oven to 350 degrees F.
In the bowl mix together the butter and 1 cup of sugar until they well combined, then add the 1 teaspoon of vanilla extract.
In a medium bowl sift together the flour and the salt.
Next add the sifted flour and salt to the butter-and-sugar mixture. Mix on low speed or kneed until you create a nice dough.
Dust a clean and dry surface with flour and dump the dough out onto the surface. shape the dough into a flat circle and the wrap it in plastic wrap and chill in the refrigerator for 30 minutes.
After the dough has been chilled remove the plastic wrap and place on a flour dusted clean surface. Next let your kids have a BALL using a rolling pin to roll the dough to about 1/2-inch thick. Allow them to cut out fun shapes with cookies cutters. ( You can even cut out card board shapes and then use a plastic knife to carve around the shapes if you do not have cookie cutters.)
Place the cookies on an un-greased baking sheet and for a nice golden color and a little more sweetness you can sprinkle the tops with sugar. Bake in the oven for 20 to 25 minutes, until a light golden brown. Then when done allow cookies to cool at room temperature for about 2- 5 minutes. Then let kids have fun decorating cookies with sprinkles and icings! Try a little fresh squeezed lemon juice in powdered sugar to form an icing consistency and an instant fresh and yummy icing. Drizzle on top of these shortbread cookies for a fantastic breakfast cookie!
